Vegan Blueberry Protein Muffins

Bursting with fresh blueberries and packed with protein power, these really are the best blueberry muffins.

Perfect for Pre-Post workout!



  • 1 banana, mashed
  • 1/2 cup unsweetened applesauce
  • 3 tbsp chia seeds
  • 1/2 cup dairy free milk (almond, coconut)
  • 3 scoops vegan vanilla protein powder
  • 1/2 cup almond meal
  • 2 tbsp coconut flour
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 lemon zested and juiced
  • 3/4 cup frozen blueberries



  1. Preheat oven to 200°C
  2. In a bowl, mash the banana. Add applesauce, chia seeds and dairy free milk. Let sit 2 minutes to let the chia seeds absorb  liquid
  3. Add protein powder, almond meal, coconut flour, vanilla extract and baking powder. Stir well
  4. Zest and juice lemon then add to batter. Mix well
  5. Add frozen blueberries and stir gently
  6. Divide mixture between greased muffin tins
  7. Bake at 200°C for 30-35 minutes
